BAKED LEMON CHICKEN with STRAWBERRY BASIL SALSA
BAKED LEMON CHICKEN with STRAWBERRY BASIL SALSA

All you need:

1 tablespoon unsalted butter

1 tablespoon olive oil

4 boneless, skinless chicken breasts

1 teaspoon kosher salt

¼  teaspoon freshly ground

black pepper

Zest and juice of 1 orange

Zest and juice of 1 lemon

 

Salsa

1 cup diced strawberries

½ small red onion, chopped fine

¼  cup fresh basil leaves,

sliced into ribbons

Juice of 1 lemon

2 teaspoons honey

Pinch salt

 

All you do:

1. Preheat oven to 425 F.

2. Melt butter and olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper on both sides and place in the hot pan. Sear chicken for 2 minutes per side, then transfer the skillet to the oven and bake for 15 minutes longer. Once cooked, finish the chicken with citrus zest and juice and allow it to rest for 5 minutes.

3. Meanwhile, combine salsa ingredients in a small bowl.

4. Transfer chicken to a serving platter and spoon pan juices over. Top with salsa and serve. Serves 4
