Beef tenderloin with onion jam and horseradish cream

Beef Tenderloin
1 pound piece beef tenderloin – trimmed
1 tablespoon Fustini’s Robust Single Varietal olive oil
Salt and pepper
Fustini’s Onion Jam
Horseradish Cream
Preheat oven to 400 F. Rub EVOO all over beef tenderloin and season with salt and pepper. Place beef into hot oven proof pan over high heat and sear each side until browned. Place pan into oven and bake until desired temperature is achieved. Remove from oven and let rest before slicing and serving with the two sauces. Great served solo, or on ciabatta bread.
Horseradish Cream
½ cup mayonnaise
¼ cup sour cream
¼ cup cream cheese – softened
2-4 tablespoons horseradish
Dash Worcestershire sauce
1 teaspoon Fustini’s Tuscan
Herb EVOO
Salt and pepper
Mix all together very well and refrigerate until ready to use. Serves 6.
