jicama, mango & radish slaw

All you need:

Juice of 2 limes

¼ cup chopped cilantro

2 tablespoons chopped mint

2 tablespoons agave nectar

1 tablespoon white wine vinegar

¼ teaspoon salt

1 small jicama, peeled and julienned

1 ripe mango, peeled and julienned

6 radishes, trimmed and julienned

All you do:

  1. Combine lime juice, cilantro, mint, agave, vinegar and salt in a mixing bowl
  2. Add jicama, mango and radish and toss gently to combine. Serve immediately or keep cold until ready to serve. Serve as a side dish or a garnish for tacos or grilled fish. Serves 4
