Chicken pancakes – pulled chicken, turnips, potato, and pancetta pancakes, topped with a salad of cabbage, carrots, onions and scallions in a ketchup soy honey dressing

Pancakes:

2 cup flour

1 ½ cups water

1 egg

2 Tablespoons salt

1 ½ black pepper

1 Tablespoon ginger

1 Tablespoon granulated garlic

Leftover chicken pulled

Leftover turnips, potaotes, and pancetta diced

Whisk all ingredients together

Directions for leftovers:

In an electric skillet or pan pour in pancake mixture to form a pancake roughly 2 ounces. Cook like a pancake until golden brown (sometimes adding a little butter will help). Plate, top with reserve cabbage mixture tossed in ketchup soy honey dressing. Finish again with fresh avocado, scallion, and cilantro and drizzle the ketchup soy honey on top.

½ cup soy

¼ honey
