Ingredients for crust

1/2 cup (1 stick) butter, softened

3 tablespoons sugar

1 cup flour

Ingredients for filling*

2 cups water

2 cups sugar

6 tablespoons cornstarch

1 (6 ounce) package strawberry jello

3 quarts strawberries, cleaned and de-stemmed

*If you are using a shallow pie plate, cut filling recipe in half

Strawberry season begins in early June.
Watch for them at the local farmers markets.

Preparation for crust

Mix butter, sugar and flour and press into a greased deep pie plate. Bake at 375 F for 10 minutes.

Preparation for filling

Bring water, sugar and cornstarch to a boil, stirring until thick and clear. Remove from heat; add strawberry jello. Mix well and cool. Fold in strawberries. Pour into pie shell. Store in refrigerator until set; serve with whipped cream.
