Sweet Chili Meatballs

Sweet Chili Meatballs

Jaci Volkers, office manager

“We’re all about doing things that are easy and filling for lunch here. The meatballs are a ‘set it and forget it’ kind of recipe, and it’s easy to make large batches.”

Ingredients

Sweet Chili Sauce — you can make your own, find it in the ethnic aisle at the grocery store or you can go to Asian Grocery just off Butternut on the north side of Holland. Whatever you decide, you’ll need about 30 ounces.

Meatballs — 2 bags, ready-made, found in the freezer section. You can use turkey, chicken or beef — but don’t get the Italian ones, those have other seasonings on them.

Directions:

Put meatballs in the slow cooker, cover with sauce, give it a stir and turn it on low for 8 hours, or high for 4 hours. That’s it. You could get fancy and serve them up on a baguette with a nice carrot and daikon slaw, or over rice noodles, but we really prefer to just put them in a bowl and eat them with a fork.
