WATERMELON GAZPACHO

watermelon gazpacho

Ingredients

4 cups watermelon
2 cups diced, seeded and  peeled cucumber
½ cup diced red onion
½ cup diced yellow bell pepper
1 ½ cups canned plum tomato with juice
¼ cup olive oil
2 tablespoons minced jalapeno 
2 tablespoons chopped cilantro
1 tablespoons balsamic vinegar
2 tablespoons lime juice
1 tablespoon minced garlic

Garnish

1 radish sliced thin 
8 mint leaves
1 fresh jalapeno sliced thin

Method

Combine watermelon, cucumber, onion and bell pepper and mix. Once mixed, set half of mixture aside in mixing bowl.

Blend tomato, seasoning, minced jalapeno, cilantro, lime, vinegar, oil, garlic and half mixture of watermelon, cucumber, onion and bell pepper until smooth.

Once blended, add to set-aside mixed ingredients and mixed until incorporated.

Pour mixture into chilled bowl and top with mint, radish, fresh jalapeno and feta cheese.
